Garri is a popular Central and West African food made from cassava tubers that have been harvested, cleaned, grated, squeezed to get rid of the starchy water and fermented for some days. Thereafter it is fried either dry (white garri) or in some red palm oil ( yellow garri). Yellow garri contains more nutrients (vitamins C and D) derived from palm oil. Garri can be cooked in hot water or simply soaked in cold water and consumed.
